Vibrio Infections, Cholera. Crabs have been a repeated source of cholera in the United States and elsewhere, even though they are rarely eaten raw. Crabs artificially inoculated with V cholerae O1 have shown that boiling for < 10 min. or steamed for < 30 min. may still harbor viable vibrios, which can then multiply to high counts if the crabs are left at room temperature for several hours.
